TikTok sensation Shay Spence shares foolproof recipes from his new cookbook, Meals You Can’t Mess Up, and this Mixed-Berry Cardamom Cobbler is a must-try. “Cardamom has a unique floral, citrusy character that should absolutely be a staple in your spice drawer,” Shay says, and this cobbler proves his point perfectly. Heat oven to 350°F. In 9 x 13-inch baking dish, add butter and place it in preheating oven for 8 min., until butter is melted.

Meanwhile, in large bowl, whisk together self-rising flour, cardamom and 1 1/2 cups sugar. Add buttermilk and vanilla and whisk until thoroughly combined, then pour into preheated baking dish with melted butter.

Scatter berries evenly on top of batter, sprinkle with remaining Tbs. sugar and bake for 40 to 45 min., until deep golden brown on top. Serve hot with vanilla ice cream.

Ingredient Intel: Self-rising flour is basically just all-purpose flour that already has a leavening agent (baking powder) in it, so it creates a very fluffy, almost cake-like texture in this cobbler that I love. It's also a great shortcut ingredient for fluffy biscuits.
