Ingredients

  • 8 Yukon gold potatoes (about 6 oz. each)
  • 4 Tbs. butter
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. chopped fresh rosemary
  • 1 tsp. chopped fresh parsley

Instructions

• Heat oven to 375°F. Coat rimmed baking sheet with cooking spray. Cut thin slits crosswise into potatoes, making sure not to cut all the way through. Place potatoes on rimmed baking sheet.

• In small microwave-safe bowl, microwave butter in 15-sec. intervals, stirring, until melted, about 1 min. Stir in garlic, salt and pepper; brush over outside of potatoes making sure mixture drips down in between slits. Bake until potatoes are tender and golden brown, about 1 hr., 10 min. Sprinkle with chopped rosemary and parsley.
