Tasty Tortellini Pasta Salad Recipe Is Perfect for a Summer Picnic!

For me, pasta salads are the best summer side. They’re quick to toss together, and you can serve them at room temperature or chilled. Trouble is, they sometimes get a bad rap for being bland or boring. If you feel the same way, then you have to try this Tortellini Pasta Salad recipe. It’s loaded with fresh zingy flavor.

We start with fresh 3-cheese tortellini. They cook up in mere minutes and add a burst of flavor with every bite. You can find all sorts of stuffed pasta in the refrigerated section of most grocery stores, and any variety would be delicious here. Pasta and sausage are a match made in heaven. To keep things light, we stir in Italian-style chicken sausage, then toss it all together with an easy vinaigrette. Ingredients

  • 1 (9 oz.) pkg. refrigerated three-cheese tortellini
  • 2 links Italian-style chicken sausage
  • 1/4 cup olive oil
  • 2 Tbs. white balsamic vinegar
  • 1/8 tsp. pepper
  • 4 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Asiago cheese

In large pot of salted boiling water, cook tortellini according to package directions; drain. Coat 10” nonstick skillet with cooking spray; heat over medium heat. Add sausage; cook, turning, until browned, 5–6 min. Cover; over medium low, cook, turning, until no longer pink in center, 10 min.

Remove; let stand 5 min. before slicing. In large bowl, whisk oil, vinegar and pepper. Add tortellini, spinach, tomatoes, cheese and sausage; toss until combined.
