You won’t believe how delicious and filling this quick-make pizza-lover’s meal is
Ingredients:
- ¼ cup broth
- ½ cup no-sugar pizza sauce (such as Rao’s)
- dash liquid smoke
- salt/pepper to taste
- 16 oz. cauliflower rice
- 1 cup sliced pizza veggies, such as mushrooms and onion
- Italian seasoning to taste
- 1 cup full-fat shredded mozzarella
- Turkey pepperoni or any pizza toppings desired
Instructions:
- Mix broth, pizza sauce, liquid smoke and salt/pepper; set aside.
- In hot skillet over medium heat, add cauliflower rice, optional pizza veggies and Italian seasoning. Stir in the sauce mixture. Cover and cook 15 minutes.
- Uncover, increase heat and cook until most of the liquid evaporates. Top with 1 cup mozzarella. Layer on pepperoni or any toppings you’re using.
- Cover again, reducing heat, until cheese melts, about 2 minutes. Alternately, for more authentic flavor, broil skillet in oven until cheese is golden and bubbly.
