I Tried the Fluffy Seagull Latte Trend—and Found a Way To Make It Healthier Too
The nostalgic-flavored drink is made with marshmallow fluff and peanut butter
As a nutrition writer, I’ve heard just about every health food trend over the years: seaweed chips, cricket protein powder, camel milk, mushroom tea. And I’ll try just about anything in the name of health. But on vacation recently, I was ready to enjoy a more whimsical (read: decadent) side of the foodie scene. So when my friend Kim told me about a TikTok coffee trend that started in Cape Cod, Massachusetts and had spread across the country, I knew I had to check it out. Here’s what I learned when I tried the viral Fluffy Seagull latte craze, plus how to make it a bit healthier at home.
What is a Fluffy Seagull latte?
This latte drink, which can be enjoyed iced or hot, originated at Lighthouse Keeper’s Pantry, a cute coffee shop and gourmet snack store. To make the Fluffy Seagull latte recipe, they line the drink container with marshmallow cream fluff and add about four pumps of peanut butter-flavored syrup. Then they pour in three shots of espresso and top it off with milk (and optional ice).
The drink has grown in popularity since Memorial Day, resulting in long lines, endless TikTok reels and coffee shops nationwide trying to mimic the recipe that looks white like a seagull’s pillowy feathers.
Why is the Fluffy Seagull latte so popular?
For many fans, this drink taps into the nostalgic flavors of the childhood sandwich known as the fluffernutter, made with peanut butter and marshmallow fluff. These were the sandwiches that latch-key Gen X kids in the 80s made for themselves when they got home from school. They signaled the sweetness of newfound freedom and independence.
I have a distinct childhood memory of my beagle Mittens grabbing one of those gooey masterpieces off my kitchen counter. Her life must have flashed before her eyes when she realized the entire sticky thing was trapped to the roof of her mouth. We survived that day, and now I was ready to reclaim that playful flavor profile again as an adult.
My thoughts on the Fluffy Seagull latte
Excited to explore this food trend, I took my sister-in-law Christine with me for a coffee run. As luck had it, the famous coffee shop that started it all was just a few miles down the road from my vacation spot.
The shop’s big front windows were decorated with stacks upon stacks of marshmallow fluff tubs. I knew we were in the right place. There was also a line so long you’d think people were waiting to ride Disney’s Splash Mountain rather than get a splash of espresso. And the place definitely leaned into its fluffy fame, selling Fluffy Seagull hats and bird stuffies.
How the viral drink tastes
It was a rainy day and we stood in line for more than an hour for our drinks. But it was a cheerful and fun atmosphere. When I finally took my first sip of the $7.50 beverage, the latte didn’t taste that much different from a regular latte. The peanut butter flavor was subtle. And the marshmallow fluff still clung to the sides of the cup, so I used my straw to scrape the deliciously sticky stuff down into the liquid.
After doing so, the drink tasted sweeter and better. In hindsight, I may have enjoyed my Fluffy Seagull more hot rather than iced so the marshmallow could meld into the rest of the drink better.
Chrstine, never one to be swayed by trends, got a different specialty drink: the Summer Vacation coffee, flavored with pistachio and coconut. It was excellent. By the time we left, there were about 40 or 50 more people in line waiting for this fluffy caffeine fix.
How to make a healthier version of the Fluffy Seagull latte
There are so many ways to customize this coffee drink to make it a tad healthier for everyday enjoyment. For starters, when making it at home, replace the syrup with a spoonful of real nut butter to get a dose of protein and healthy fats, recommends DJ Blatner, RDN, author of The Flexitarian Diet and the former head dietician for the Chicago Cubs. Or try a peanut butter-flavored protein powder or dry mix like PB2.
If you’re a fan of roasted peanuts or salted peanut butter, you could also add a pinch of sea salt to your coffee for added electrolytes.
It’s hard to mess with the signature marshmallow flavor here. But try trimming the amount of fluff in half to reduce sugar intake. And if balancing blood sugar is a concern, add a pinch of cinnamon, known to help blunt spikes and reduce appetite.
Also consider your milk choice. I used almond milk, but if you’re picking a dairy alternative, try ones that are unsweetened and free of emulsifiers or other additives, says Dawn Harris Sherling, MD.
And rest assured that the base of this beverage—strong black coffee—does have some real health benefits of its own. It’s linked to better aging in women and also supports metabolism.
Is the TikTok-famous drink worth it?
Overall, I rate the Fluffy Seagull latte an 8/10 and the entire charming experience a 10/10. There is a real sense of community around this coffee trend. The drink alone won’t be the magic bullet for anyone’s health goals. But it can be a delicious treat on occasion. More than anything, it’s fun, and that mood boost can go a long way when dealing with daily stress. Blatner, who told me she grew up eating fluffernutter sandwiches, shared this motto: “Joy is a nutrient. Be sure to get your serving today!”
