What is banoffee pie?

Banoffee pie is a dessert consisting of a pastry or graham cracker crust that’s filled with sliced bananas, toffee or caramel sauce, and whipped cream. The pie is often topped with shaved chocolate before serving. It’s believed that Nigel Mackenzie and Ian Dowding invented banoffee pie at a restaurant in England called The Hungry Monk. Known for its balance of sweet and creamy flavors, this pie is a wow-worthy option that’s simple to prepare.

A simple and mouthwatering banoffee pie recipe

This Banoffee Pie recipe is also from The Cooking Foodie and uses a graham cracker crust that takes less than 10 minutes to bake. The pie is perfect for any occasion and can be assembled the night before. If you’re looking to add more richness to the pie, substitute chocolate graham crackers for the plain variety when making the crust.

Banoffee Pie

Ingredients:

For the pie base:

  • 7 oz. graham crackers 
  • 7 Tbs. unsalted butter, melted

For the filling:

For the topping:

  • 1½ cups cold heavy cream
  • 3 tbsp powdered sugar
  • 1 tsp. vanilla extract
  • Chocolate shavings for garnish 

Directions:

  • Yield: 8 servings 
  1. Preheat oven to 350°F.
  2. In food processor or plastic bag crush graham crackers into fine crumbs. Add melted butter and pulse until combined. Press into bottom and sides of 9-inch pie/tart pan. Bake 5 to 7 minutes. remove from the oven and allow to cool.
  3. Spread dulce de leche on top of crust. Arrange banana slices in 1 to 2 layers on top of dulce de leche.
  4. In large bowl, place cold heavy cream, powdered sugar and vanilla extract. Whip to medium peaks. 
  5. Spread whipped cream on top of bananas. Refrigerate at least 2 hours. 
  6. Before garnish with chocolate shavings.
  7. Note: Try preparing mini versions of this pie using individual pie tins.
