Chicken Fajitas

Ingredients:

  • 2 tsp olive oil
  • 1½ tsp lime juice
  • 8 oz raw boneless skinless chicken breast, thinly sliced
  • 2 cups sliced bell pepper
  • 1 cup sliced onion
  • 1 tbsp taco seasoning
  • 2 tbsp chopped fresh cilantro
  • Serving suggestions: corn tortillas, salsa, light sour cream

Directions:

  • Active: 10 mins
  • Total time: 35 mins
  • Yield: 2 servings
  1. Heat oven to 400°F. Spray baking sheet with nonstick spray. In small bowl, mix oil with lime juice. Place chicken, pepper and onion on baking sheet. Sprinkle with taco seasoning and drizzle with oil mixture. Bake 10 minutes.
  2. Flip chicken and veggies. Bake until chicken is fully cooked and veggies are tender and golden, 10 to 12 minutes. Serve topped with cilantro. If desired, serve with corn tortillas, salsa and sour cream.
