Spam Tater Tot Casserole
Ingredients:
- 1 can Spam with Real HORMEL® Bacon, cut into ¼-inch cubes
- 12 eggs, beaten
- 1 (28 oz.) bag frozen tater tots,
- 3 cups sharp cheddar cheese, shredded
- 1 small yellow onion, diced
- 1 tbsp smoked paprika
- 1 tbsp onion powder
- 1 tbsp salt
- Black pepper
- Nonstick cooking spray, for greasing
Directions:
- Active: 10 mins
- Total time: 1 hr., 20 mins
- Yield: 8 servings
- Preheat oven to 350°F. Grease rectangular baking dish with nonstick cooking spray.
- Heat skillet over medium heat. Melt butter and add in onions. Sauté onions a few minutes until soft. Then, transfer onions to a separate bowl and set aside.
- In same skillet, fry Spam cubes until crisp and brown, around 3 to 4 minutes.
- Add sautéed onions back into skillet, remove from heat and set aside.
- In large bowl, whisk together eggs, cheese, paprika, onion powder, salt and lots of black pepper until fully combined.
- Add tater tots and sauteed onion-Spam mixture into the beaten egg mixture. Mix everything well and pour into greased baking dish.
- Bake 45 minutes or until mixture is set. Switch oven to broil setting and cook an additional 15 to 20 minutes until golden brown on top.
- Remove casserole from oven and cool slightly. Enjoy warm!
