These old-fashioned cakes are a nod to early American democracy and the traditions of colonial-era gatherings. So, we’re sharing everything you need to know about election cakes and how to to make your own and bring a slice of history to your table.

A history of election cakes

Election cakes date back to the early American colonies, where communities would prepare them to mark important civic events like town meetings and, eventually, elections. They were part of the broader “muster cakes” tradition, originally baked to fuel militia musters during colonial times, when gathering supplies and resources for the community was a group effort.

By the 18th century, election cakes evolved into a celebratory food for election days. The cake itself became a symbol of inclusion and support, as community members contributed ingredients like flour, sugar and spices for a giant, shared dessert. It was also a way for even those who couldn’t vote, including women, to participate in the process.

Traditional election cakes were massive—often weighing up to 12 pounds. They have a texture that’s more bread-like than modern cakes, thanks to yeast as the leavening agent. This gave them a hearty and dense texture. This was all-day baking affair, as the dough would often need to rise for hours before baking. As a result, election cakes have a slightly tangy, fermented flavor profile.

Election cakes are much like modern fruit cakes, flavored with warming spices, molasses, dried fruits like raisins and currants and sometimes a splash of brandy.

Originally, they were baked in large bundt pans or loaf pans to accommodate their size. Though many election cakes don’t feature frosting, some recipes suggest a light icing or sugar glaze to complement the spiced, fruity flavors.

  • Use yeast for authenticity: If you want to stay true to the original recipe, use yeast as your leavening agent. This will add a unique depth of flavor and give it the characteristic texture.
  • Experiment with spices: Traditional election cakes are generously spiced, so feel free to experiment with cinnamon, nutmeg, allspice and cloves. They’ll make your kitchen smell incredible!
  • Let the dough rise fully: Since election cake is yeast-based, letting the dough rise properly is key for a fluffy and light texture.
  • Add dried fruit for sweetness: Dried fruit like raisins, currants or even chopped dates or figs add a touch of natural sweetness and texture.

How to make a classic election cake

Here’s a shortcut recipe from Christina’s Cucina inspired by traditional election cakes, with a few modern twists to keep it easy and delicious.

Ingredients:

  • ⅔ cup water (105 to 115°F)
  • 1 pkg. active dry yeast
  • 4 cups all purpose flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • ½ tsp. salt
  • ½ tsp. ground ginger
  • ¼ tsp. nutmeg, freshly ground
  • 2 sticks (8 oz.) butter, softened
  • 2 eggs, lightly beaten
  • 2 cups brown sugar, firmly packed
  • 1 cup buttermilk
  • 1 Tbs. vanilla
  • 1 cup golden raisins
  • ¼ cup dried cherries, or any dried fruit that you prefer

For the icing

  • 1½ cups confectioners sugar
  • 2 Tbs. whisky or brandy
  • ½ tsp. vanilla

Directions:

  • Total Time: 1 hour 20 minutes
  • Yield: 16 servings
  1. Grease and flour a bundt pan. Then, put warm water in the bowl of a stand mixer add the yeast, sprinkling it to cover the top. Add a pinch of sugar on top of the yeast and allow to rest for about five minutes.
  2. In a bowl, mix the flour with the baking powder, cinnamon, salt, ginger and nutmeg, then set aside.
  3. If yeast has dissolved and begins to bubble, add one cup of the flour mixture, stirring it in thoroughly. Add butter and mix well.
  4. Next, add sugar, buttermilk and vanilla and mix until well combined. Add the eggs and mix until just combined. Finally, mix in the rest of the flour, reserving one tablespoon. Toss the raisins and cherries in the tablespoon of flour and then fold them into the cake batter.
  5. Pour the batter into the prepared pan. Loosely cover with a towel and allow to rise for about an hour or until risen.
  6. Preheat oven to 350°F. Bake cake for 50 to 60 minutes, or until a cake tester comes out clean. Place the pan on wire rack to cool, then carefully remove after a few minutes.

For the icing

  1. In a medium sized bowl, whisk the confectioners sugar, alcohol and vanilla until smooth. Start with two tablespoons of liquor and the vanilla. Add more alcohol to reach your desired consistency.
  2. Drizzle or spoon over the top of the cake when completely cool before serving.

Storage notes

To store election cake, wrap it tightly in plastic wrap or foil, then place it in an airtight container to keep it fresh. Since traditional election cakes are fruit- and spice-heavy, they tend to keep well at room temperature for a few days. For longer storage, you can refrigerate it for about a week or freeze it for up to three months.
