Unsurprisingly, Ray also loved the dish. “You’re the best person on the planet because this taco is delicious,” she raved.
Hudson’s taco technique is what sets them apart. Instead of simply warming the tortillas, she fries them in oil before adding the ground beef filling—and then fries them again. The result? A crispy yet chewy texture that makes them completely irresistible.
“It’s the best texture,” Barrymore declared after taking a bite. “This is what I dream of.”

How to make Kate Hudson’s 4-ingredient tacos

For Hudson, this recipe is more than just a quick meal. With a packed schedule balancing acting, music, and business ventures she needs something easy and crowd-pleasing. One of the best parts about her tacos is that they only require four basic ingredients. Of course, the toppings are up to you!
Barrymore was instantly hooked. “Do you hear me salivating over here?” she asked. Hudson’s 4-ingredient tacos have already won over two daytime talk show hosts—Barrymore and Rachael Ray—so why not give them a try yourself?
Ingredients:
- 1 onion, chopped
- 2 lbs. ground beef
- 1 pkg. taco seasoning (Hudson didn’t specify a brand on The Drew Barrymore Show, but when she made these on Rachael Ray, she used a homemade blend of chili powder, cumin, paprika and more.)
- Neutral cooking oil (vegetable or avocado)
- Corn tortillas
- Preferred toppings (sour cream, shredded cheese, cilantro, salsa, guacamole)
Directions:
- Total time: 30 minutes
- Yield: 10-12 tacos
- Sauté the chopped onion in a pan with a bit of oil until softened. Then, add the ground beef and cook until browned, seasoning it with your favorite taco seasoning.
- In a large skillet, heat a “soaking level of high heat oil” until shimmering. Then, carefully add one tortilla and let it bubble slightly. Hudson waits until the looks “chewy” but not crispy or burnt.
- Working quickly, spoon some of the ground beef mixture into the tortilla, then and close with a spatula and tongs. Usually, Hudson starts another tortilla in the same pan to save time.
- Fry the taco for about 10 seconds per side until golden brown and slightly crispy. Remove from the oil and let drain on a paper towel-lined plate. Repeat with the remaining tortillas.
- Serve with preferred toppings. Hudson likes to open her taco fist before adding.
