Cucumber-Mint Spritzers

Ingredients:
- 1 lime
- 8 oz. vodka
- 1 (4″) seedless cucumber, peeled and quartered
- 1⁄4 cup fresh mint leaves
- 4 oz. ginger liqueur
- 8 oz. lemon seltzer
Squeeze 2 Tbs. juice and grate 1 tsp. zest from lime. In a blender, mix vodka, cucumber, mint and lime juice. Puree. Stir in ginger liqueur and lime zest. Fill 4 glasses with ice. Pour puree into each; top with seltzer.
