For anyone unfamiliar with keto, here’s the gist: Just swap in fat and protein for any sugar and starch you’d normally eat. This prevents your body from making enough blood sugar to fuel itself, so you begin turning fat (from food and fat cells) into an alternate fuel called ketones. “As ketones are produced, you switch from burning mostly sugar to burning mostly fat,” says Gittleman. “Soup is not only classic comfort food, it’s extremely convenient. You cook once and have several heat-and-eat meals,” says Gittleman. Gittleman adds that keto fats from soup ingredients and garnishes like grass-fed meat, coconut milk and avocado not only help trigger fat burn, there’s also evidence from British scientists that they can calm inf lammation in the brain enough to work better than antidepressants.

Use the recipe (below) to whip up a big pot of the soup, then just follow this simple meal plan. Need an occasional break from soup? Swap in a plate of protein, raw or steamed veggies and two to three servings good fat (such as avocado or olive oil). After a week, transition to meals built around nutrient-dense whole foods with little or no sugar and grains. As always, get a doctor’s okay to try any new plan.

BREAKFAST: Blitz 8 oz. water, 1 cup frozen berries, 1 serving no-sugar whey protein powder, 1 Tbs. flax oil and 1 Tbs. of chia seeds.

BEVERAGES: Aim for 64 oz. of liquids daily, choosing water, water with a splash of unsweetened cranberry berry juice or dandelion root tea.

SNACKS: Twice daily, pair a little healthy fat with protein or fiber — like guacamole with sliced veggies.

Keto Detox Soup

Enjoy 3-cup bowlfuls of Gittleman’s delicious soup as lunch and dinner.


  • 1 1⁄4 lbs. ground beef or poultry
  • 2 tsp. sesame oil
  • 1 onion, chopped
  • 6 cups sliced veggies, such as pepper, zucchini, and mushroom
  • 2 tsp. minced garlic
  • 14 oz. full-fat coconut milk
  • 4 cups broth or bone broth
  • 1-2 Tbs. curry powder
  • 1 Tbs. lime juice
  • 1⁄2 cup fresh herbs, chopped

In pot, cook meat in oil; remove. In pot, sauté onion and veggies until tender. Stir in garlic. Add meat, milk, broth, and curry. Cover. Simmer gently, stirring occasionally, 20 minutes. Stir in juice and herbs. Top with optional avocado. Serves 6.
