  • 6 (¾" thick) slices Italian bread, from 10 oz. loaf
  • 1 clove garlic
  • 2 Tbs. olive oil + additional
  • 1½ cups red and/or green cherry tomatoes
  • ¼ cup thinly sliced red onion
  • ¼ cup chopped fresh basil
  • 1 Tbs. drained capers
  • ⅛ tsp. salt
  • ¼ tsp. pepper
  • 4 oz. fresh mozzarella


• Heat oven to 350°F. Arrange bread slices in single layer on baking sheet. Rub one side of each slice with garlic. Brush with 1 Tbs. oil. Bake until toasted, about 8 min. Let cool.

• Slice tomatoes. Transfer to bowl. Add onion, basil, capers, salt, pepper and 1 Tbs. oil. Tear mozzarella into pieces. Divide tomato mixture and mozzarella among toasts. Drizzle with additional oil.
