Easy Bacon and Egg Salad Is the Perfect No-Cook Healthy Lunch
Juicy grapes and crisp lettuce add just the right amount of sweetness and crunch to this tasty toss
It gets a bad rap for being less nutritious than other lettuce varieties, but iceberg lettuce is actually a great source of fiber and vitamin C. Plus it’s the star of one of the most famous salads out there — the wedge. When I’m in the mood for something fresh and crisp, iceberg is my first choice for the base of a healthy lunch. That’s what inspired us to come up with this Bacon and Egg Salad recipe. It’s a twist on the famous wedge!
Instead of the traditional blue cheese dressing, we whip up an easy Dijon vinaigrette. Then, for another good-for-you ingredient, we add avocado. This powerhouse is loaded with heart-healthy fats and antioxidants. To get the creamy flesh without losing any nutrients, peel away the skin instead of scooping out the flesh. Simply halve and pit the avocado, then cut the halves lengthwise. Starting at one end of each quarter, lift off the skin. Give this recipe a try, then leave us a comment.

Ingredients
- 4 eggs
- 1 lemon
- 1/3 c. mayonnaise
- 2 tbsp. Dijon mustard
- 3 slices fully cooked bacon
- 1/2 head iceberg lettuce
- 1 avocado, pitted, peeled, sliced
- 1/2 c. seedless grapes, halved
- 1/2 c. croutons
- Chopped fresh chives
Instructions
PrintIn pot, combine eggs and enough cold water to cover by 1”. Over medium-high heat, bring to boil. Cover and remove from heat. Let stand 10 min. Drain and rinse under cold water. When cool enough to handle; peel eggs and cut in half lengthwise.
Squeeze 1 Tbs. juice from lemon. In small bowl, combine mayonnaise, Dijon and lemon juice; reserve. Tear bacon into small pieces.
Cut lettuce into thin wedges; transfer to serving plate. Top with avocado, eggs, grapes, bacon and croutons. Drizzle with reserved dressing. Sprinkle with chopped chives.
