This Banana Walnut Pancakes Recipe Puts a Comforting Spin on “Pancake Breakfast”

We put ripe bananas and toasted walnuts into the batter for a naturally sweet flavor 

The aroma of freshly made pancakes in the morning is sure to bring a smile to anyone’s face. The Woman’s World test kitchen has had its fair share of this classic breakfast, from Pumpkin Pancakes to Sheet Pan Pancakes. But when we want a truly comforting bite, we always make this 4-ingredient banana walnut pancakes recipe. Freshly toasted walnuts, bananas, water and store-bought cake mix combine to form a simple yet delicious batter.

No matter the day of the week, you can whip up a batch of these pancakes in 30 minutes. Serve them with a drizzle of pure maple syrup for more natural sweetness, banana slices and chopped walnuts. And for an extra bit of warm spice, add a teaspoon cinnamon into the batter. And if you really want to be indulgent, a scoop of vanilla ice cream is always a great idea.

Ingredients

  • ¼ cup walnuts
  • 2 cups vegan pancake mix, such as Birch Benders Organic Classic
  • 1½ cups water
  • 1 banana, mashed and peeled
  • Maple syrup
  • Chopped bananas and walnut pieces

Instructions

• Heat oven to 350°F. Arrange walnuts on baking sheet in single layer. Bake 10 min., checking frequently. Let cool; chop into small pieces.

• In a bowl, combine pancake mix, water, banana and walnuts. Drop ¼ cupfuls batter onto lightly greased skillet over medium heat; cook, flipping once, until golden, 2 min. per side. Drizzle with maple syrup, chopped bananas and walnuts.
