Ingredients

  • 1¼ cups oat flour
  • ¾ cup sugar
  • ½ cup cocoa powder
  • 2 tsp. baking powder
  • 1 cup almond milk
  • ½ cup olive oil
  • 2 Tbs. peanut butter
  • 1 Tbs. cider vinegar
  • 1 cup vegan dark chocolate chips

Instructions

Heat oven to 400°F. Line 12 muffin cups with cupcake liners. In large bowl, whisk first 4 ingredients with ½ tsp. salt until combined. Fold in next 4 ingredients and ¾ cup chocolate chips; divide evenly among cupcake liners. Top with remaining ¼ cup chocolate chips.

Bake until toothpick inserted in centers comes out clean, 18–20 min. Let cool 10 min.
