Southwest Bean Burgers Recipe for a Satisfying Meatless Meal Under $2 a Serving

If you’re like us, you know there’s nothing better than sinking your teeth into a juicy burger. Let’s face it, this all-American classic is comfort food at its best. But here at Woman’s World, we’re always looking for budget-friendly ways to introduce better-for-you ingredients into our meals without sacrificing flavor. That’s what inspired us to come up with this Southwest Bean Burgers recipe — it’s delicious and costs just $1.76 a serving.

Beans are loaded with fiber and lower in fat and cholesterol than ground beef. Trouble is, when mashed and formed into patties, they sometimes have a reputation for being mushy. That’s why for our Southwest Bean Burgers recipe, we mash only some of the beans, then stir them into the remaining beans. This helps the patty hold together, plus it mimics that meaty texture we all love. For the finish, we coat the burgers with seasoned breadcrumbs to seal in juices. Ingredients

  • 1/2 c. light mayonnaise
  • 1/4 c. + 2 tbsp. chopped fresh cilantro
  • 29 oz. black beans, rinsed, drained
  • 3/4 c. mild chunky salsa
  • 1/2 c. + 1/3 c. Italian-style breadcrumbs
  • 3 tbsp. oil
  • 6 crusty sandwich rolls, preferably with seeds, split
  • 3 c. mixed salad greens
  • 3 medium tomatoes, sliced
  • 1/2 c. sliced red onion

Instructions

In small bowl, stir together mayonnaise and 2 Tbs. cilantro; reserve. Reserve 1 cup black beans. In bowl with fork, mash remaining beans with salsa. Stir in ½ cup breadcrumbs, remaining ¼ cup cilantro and reserved beans. Shape into 6 (½" thick) patties; coat with remaining ⅓ cup breadcrumbs.

In large nonstick skillet, heat 2 Tbs. oil over medium heat. Working in two batches add patties to hot oil; cook, flipping once, until golden brown and heated through, 3–4 min. per side, adding remaining 1 Tbs. oil to skillet for second batch.

Spread reserved mayonnaise-cilantro mixture over cut sides of rolls. Dividing evenly, line roll bottoms with half of salad greens. Top with burgers, tomato slices, red onion slices, remaining greens and roll tops.
