Our Ramen Noodle Stir-Fry recipe is loaded with good-for-you veggies and comes together in just 30 minutes. Plus, it is so tasty, you’ll never want to order from your local noodle shop again. Ramen noodles cook up in practically not time. They’re light, fluffy and perfect for soaking up our quick from-scratch sauce. This zesty blend only takes four ingredients to whip up and adds a delightful nutty note. We finish with a colorful medley of fresh vegetables — in a pinch, simply sub in whatever you have on hand.   • 3 (3 oz.) pkgs. ramen noodles, seasoning packets discarded
  • 2 Tbs. oil
  • ¼ cup creamy peanut butter
  • ¼ cup teriyaki sauce
  • 2 Tbs. fresh lime juice
  • 1 Tbs. grated peeled fresh ginger
  • 1 onion, thinly sliced
  • 2 carrots, thinly sliced
  • 2 cups small broccoli florets (4 oz.)
  • 1 red pepper, sliced
  • 1 cup snow peas
  • ¼ cup unsalted roasted peanuts


Cook ramen noodles according to package directions; drain. Return to pot; stir in 1 Tbs. oil.

Meanwhile, in bowl, whisk together peanut butter, teriyaki sauce, lime juice, ginger and 1/3 cup water; reserve.

In 12" nonstick skillet, heat remaining 1 Tbs. oil over medium-high heat. Add onion and carrots; cook, stirring, until softened, 5 min. Add broccoli, red pepper, and snow peas; cook, stirring, until almost tender, 5 min. Stir vegetables, peanut butter mixture and peanuts into noodles. Transfer to serving bowl.
