Ramen noodles cook up in practically not time. They’re light, fluffy and perfect for soaking up our quick from-scratch sauce. This zesty blend only takes four ingredients to whip up and adds a delightful nutty note. We finish with a colorful medley of fresh vegetables — in a pinch, simply sub in whatever you have on hand. Ingredients

  • 3 (3 oz.) pkgs. ramen noodles, seasoning packets discarded
  • 2 Tbs. oil
  • ¼ cup creamy peanut butter
  • ¼ cup teriyaki sauce
  • 2 Tbs. fresh lime juice
  • 1 Tbs. grated peeled fresh ginger
  • 1 onion, thinly sliced
  • 2 carrots, thinly sliced
  • 2 cups small broccoli florets (4 oz.)
  • 1 red pepper, sliced
  • 1 cup snow peas
  • ¼ cup unsalted roasted peanuts

Instructions

Cook ramen noodles according to package directions; drain. Return to pot; stir in 1 Tbs. oil.

Meanwhile, in bowl, whisk together peanut butter, teriyaki sauce, lime juice, ginger and 1/3 cup water; reserve.

In 12" nonstick skillet, heat remaining 1 Tbs. oil over medium-high heat. Add onion and carrots; cook, stirring, until softened, 5 min. Add broccoli, red pepper, and snow peas; cook, stirring, until almost tender, 5 min. Stir vegetables, peanut butter mixture and peanuts into noodles. Transfer to serving bowl.
