- 3 (3 oz.) pkgs. ramen noodles, seasoning packets discarded
- 2 Tbs. oil
- ¼ cup creamy peanut butter
- ¼ cup teriyaki sauce
- 2 Tbs. fresh lime juice
- 1 Tbs. grated peeled fresh ginger
- 1 onion, thinly sliced
- 2 carrots, thinly sliced
- 2 cups small broccoli florets (4 oz.)
- 1 red pepper, sliced
- 1 cup snow peas
- ¼ cup unsalted roasted peanuts
Instructions
PrintCook ramen noodles according to package directions; drain. Return to pot; stir in 1 Tbs. oil.
Meanwhile, in bowl, whisk together peanut butter, teriyaki sauce, lime juice, ginger and 1/3 cup water; reserve.
In 12" nonstick skillet, heat remaining 1 Tbs. oil over medium-high heat. Add onion and carrots; cook, stirring, until softened, 5 min. Add broccoli, red pepper, and snow peas; cook, stirring, until almost tender, 5 min. Stir vegetables, peanut butter mixture and peanuts into noodles. Transfer to serving bowl.
