Ingredients
- 2 cups fresh corn kernels
- 1 cup chunky fresh tomato salsa
- ¼ cup sliced scallions
- ¼ cup chopped fresh cilantro
- 1 Tbs. orange juice
- Salt and pepper
- ¼ cup dry garlic-and-herb seasoning rub
- 3 Tbs. honey mustard
- 3 Tbs. balsamic vinegar
- 2 Tbs. minced fresh thyme
- 1 Tbs. olive oil
- 8 boneless, skinless chicken breast halves (3 lbs.)
Instructions
PrintPrepare grill for medium-high direct- and indirect-heat cooking. In bowl, combine corn, salsa, scallions, cilantro and orange juice. Season to taste with salt and pepper.
In separate bowl, mix seasoning rub, mustard, vinegar, thyme and oil; reserve half. Brush chicken with remaining seasoning mixture. Place chicken over direct heat; grill, flipping once, until golden, about 1 min. per side. Move to indirect heat; grill, flipping once, until no longer pink in centers, 5–7 min. per side. Brush chicken with reserved mustard mixture. Arrange corn salsa and chicken on serving platter.
