This Delicious Honey-Mustard Chicken With Corn Salsa Recipe Preps in Just 20 Minutes

Grilled chicken is extra juicy and flavorful, thanks to a sweet and tangy sauce

With grilled chicken, the right seasonings can take it from good to great. And if those seasonings come in the form of a sauce that you put on the bird before and after grilling to make it extra juicy and flavorful, even better! At the Woman’s World test kitchen, we created a tangy and sweet honey mustard sauce, brushed it on chicken breasts and grilled them up. This adds moisture, plus it helps you achieve those gorgeous grill marks, thanks to caramelization. Then we added more sauce before serving. Talk about sweet and smoky goodness! 

The best part about this honey-mustard chicken with corn salsa recipe is that it’s easy to make. The salsa gets doctored up with some zesty ingredients like cilantro as the chicken does its thing on the grill. The whole thing is ready to eat in 40 minutes, making it perfect for a summer weeknight.

Ingredients

  • 2 cups fresh corn kernels
  • 1 cup chunky fresh tomato salsa
  • ¼ cup sliced scallions
  • ¼ cup chopped fresh cilantro
  • 1 Tbs. orange juice
  • Salt and pepper
  • ¼ cup dry garlic-and-herb seasoning rub
  • 3 Tbs. honey mustard
  • 3 Tbs. balsamic vinegar
  • 2 Tbs. minced fresh thyme
  • 1 Tbs. olive oil
  • 8 boneless, skinless chicken breast halves (3 lbs.)

Instructions

Prepare grill for medium-high direct- and indirect-heat cooking. In bowl, combine corn, salsa, scallions, cilantro and orange juice. Season to taste with salt and pepper.

In separate bowl, mix seasoning rub, mustard, vinegar, thyme and oil; reserve half. Brush chicken with remaining seasoning mixture. Place chicken over direct heat; grill, flipping once, until golden, about 1 min. per side. Move to indirect heat; grill, flipping once, until no longer pink in centers, 5–7 min. per side. Brush chicken with reserved mustard mixture. Arrange corn salsa and chicken on serving platter.
