BBQ Chicken Tacos with Mango Salsa

It’s easy to brighten up rotisserie chicken with this tropical salsa for a fantastic taco dinner that’s on the table in less than 30 minutes.

  • 1 mango, pitted, peeled and cut into ½” pieces
  • 1 avocado, pitted, peeled and cut into ½” pieces
  • ¼ cup chopped red onion
  • 1 small jalapeño pepper, thinly sliced
  • 1 Tbs. lime juice
  • ¼ tsp. salt
  • 3 cups shredded cooked chicken
  • ¾ cup barbecue chicken
  • 2 tsp. ground cumin
  • 12 white corn tortillas
  • ¾ cup fresh cilantro leaves


  1. In bowl, combine mango, avocado, onion, jalapeño, lime juice and salt; reserve.
  2. In pot, combine chicken, barbecue sauce and cumin; cook over medium-low heat, stirring occasionally, until heated through, 7–8 min.
  3. Meanwhile, heat corn tortillas according to package directions. Divide chicken and mango mixtures evenly among tortillas. Serve tacos topped with cilantro.
