Delicious Meets Nutritious in This Barley Chicken Stew Recipe — Only $2.21 a Serving

Get dinner on the table fast with this hearty recipe that preps in just 20 minutes

If you’re like me, you know it can be a challenge to get a healthy meal on the table without breaking the bank. Our Barley Chicken Stew recipe in not only nourishing, at $2.21 a serving, it’s also easy on your wallet. Best of all, it’s so yummy, we promise, you’ll want seconds!

I’m a big fan of one-pot meals like soups and stews. They’re usually chock full of fresh veggies and other good-for-you ingredients. And simmering everything together means most of the nutrients are retained right in the broth or sauce. Barley is a superfood high in fiber and low in calories. But brown rice would also be a good choice. Then a sprinkling of curry powder adds savory flavor. Plus, this spice blend contains turmeric, which has some surprising anti-inflammatory health benefits. To finish, we wilt in spinach — it’s full of vitamins, minerals and antioxidants. And the whole thing is super-easy to put together with rotisserie chicken. Make a pot of this hearty stew, then leave us a comment.
