Quick + Easy Chicken-and-Corn Tortilla Roll-Ups Recipe Is Just $2.25 a Serving
This delicious dish is is better than takeout!
At my house, Tex-Mex cuisine is a family favorite. At least one a week we call our local Mexican restaurant for takeout. It’s fast, easy and delicious. Trouble is, it also tends to be high in fat and calories. Plus, it gets to be expensive. That’s why this Chicken-and-Corn Tortilla Roll-Ups recipe is perfect. It speeds to the table in just 30 minutes. And it’s healthier, too. Best of all, at only $2.25 a serving, it’s easy on the wallet.
Instead of beef, we use lean ground chicken in this recipe. Then we stir in store-bought salsa to add fast flavor. For another way to speed things up, we use frozen corn kernels and jarred roasted red peppers. It turns out so yummy. And it’s even better than takeout! Ingredients
- 1 Tbs. olive oil
- 1 lb. ground chicken
- 1 Tbs. chili powder
- 1 cup salsa
- 1 cup frozen corn kernels
- ¼ cup chopped fresh cilantro
- 4 (8") soft taco-size flour tortillas
- 1 cup drained roasted red peppers from a jar, cut into strips
- Guacamole (optional)
Instructions
PrintIn 12" nonstick skillet, heat oil over medium-high heat. Add chicken and chili powder; cook, stirring, until browned, 7–8 min. Add salsa and corn; cover. Over medium-low heat, cook until flavors blend, 7–8 min.; stir in cilantro.
Dividing evenly, spread mixture over tortillas, leaving ½" border around ¾ of edge and 1" border around remaining part of edge farthest from you. Top with red peppers. Fold 2 opposite sides in about ½".
Starting with side closest to you, roll up each tortilla jelly-roll style. Heat grill pan over medium heat. Working in batches, if necessary, place roll-ups, seam sides down, in grill pan. Grill, turning, until browned all the way around roll, about 4 min. total. If desired, serve with guacamole.
