This isn’t your average guac: Jenny roasts habaneros and garlic over an open flame for smoky depth, then mashes everything in a traditional molcajete for incredible flavor and texture. Her secret? Adding avocado pits to keep it fresh and vibrant green—a tip passed down from her mother. Ready in just 20 minutes, this fiery-yet-creamy dip will have everyone coming back for more!

  • 1 or 2 fresh habanero peppers
  • 2 garlic cloves
  • 2 tsp. chicken bouillon powder
  • 1 tsp. flaky salt
  • 4 large avocados, halved, pitted (save pits)
  • 1/2 white onion, diced
  • 1/2 bunch cilantro, chopped
  • 2 Roma tomatoes, diced
  • Juice of 1 fresh lime
  • 1 14.5-oz.) bag tortilla chips

Roast habaneros and garlic on an open flame until soft and charred, for 2 min. On a large molcajete, start by grinding garlic, chicken bouillon and salt then add habaneros. Once you attain a creamed consistency, add scooped out avocado flesh (reserve the avocado pits). Next, use a spoon to mix in the avocado, then mash with rock until all is creamy but some chunks of avocado remain.

Now it’s time to add onion, cilantro and tomatoes, lightly mashing it with the rock but not until it becomes creamy, just a little bit to release the flavors, but still leaving it a bit chunky. Squeeze in lime juice and mix well with a spoon. Once all is combined, add avocado pits. As my mother says, the pits will help the guacamole stay fresh and green. Enjoy with tortilla chips.
