I’m a big fan of potluck dinners. They’re a great way to get together with family and friends. And since everyone brings a dish, the host doesn’t have to do all the work. Plus, who doesn’t love sampling all of the other tasty treats. Take our Meatballs with Peppers and Cherry Tomatoes recipe. This crowd-pleaser can serve as appetizer or double as a main—simply spoon the whole thing over cooked linguine or polenta.

When making meatballs, it’s key that they’re all the same size. To make easy work of it, roll the meat mixture into a log, then use a sharp knife to cut off equal-size portions. Ingredients

  • 1/2 cup tomato and basil pasta sauce
  • 1 1/2 lbs. ground beef
  • 1/2 cup Italian-style dry breadcrumbs
  • 2 eggs
  • 2 cloves garlic, minced
  • 3 tsp. chopped fresh thyme
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 yellow pepper, cut into 3/4” pieces
  • 1 cup cherry tomatoes
  • 16 ciliegine (cherry-size) fresh mozzarella balls, drained

Heat oven to 400°F. Spread pasta sauce in bottom of 2-qt. baking dish. In large bowl, combine ground beef, breadcrumbs, eggs, half of garlic, 2 tsp. thyme, salt and pepper. Shape into 24 meatballs.

Coat 12” nonstick skillet with cooking spray; heat over medium heat. In batches, cook meatballs, turning occasionally, until browned all over, about 5 min. per batch. Transfer meatballs to baking dish. Top with pepper pieces and tomatoes.

Bake until meatballs are no longer pink in centers, about 25 min., adding mozzarella balls during last 5 min. of cooking time. Top with remaining garlic and 1 tsp. chopped thyme.

Tip: To make serving super-easy, put your slow cooker to work. Once cooked, transfer the meatball mixture to slow cooker, set on low to keep warm, then place on your buffet table. Set out individual plates and toothpicks or cocktail forks and let guests help themselves.
