Energy-Boosting Creamy Spinach Artichoke Dip Is The Starter That Has It All
Compounds in this veggie-packed dip help the body make new mitochondria
Either as an appetizer or even a light lunch, our energy-boosting creamy spinach artichoke dip is a stealthy healthy treat. Compounds called nitrates found in spinach—also in broccoli, kale, cabbage and celery—rev the production of mitochondria in your body. But I just like how it tastes! I’ve also made this into a warm dip. Simply place it in a small baking dish, top with 1/4 cup grated Parm. and bake at 350°F for 15 min. You can also use it in these Enchiladas. And since spinach is one of my favorite vegetables, I often keep extra in the freezer to throw together quick, satisfying meals like these easy Creamy Shells.

Ingredients
- 1 (14 oz.) can artichoke hearts, drained
- 1 (10 oz.) pkg. frozen chipped spinach, thawed
- 1 (7.5 oz.) cont. chive and onion cream cheese, at room temp.
- 3/4 cup mayonnaise
- 1/4 cup fresh parsley
Instructions
PrintRoughly chop artichoke hearts. In clean kitchen towel, squeeze excess moisture from spinach.
In food processor, combine artichokes, spinach, cream cheese, mayonnaise and parsley. Pulse 3–4 times until blended; process until just smooth, about 30 sec. Season to taste with salt and pepper. Transfer to serving bowl; garnish as desired. Serve with crudité or pita chips.
