Kelly Senyei’s Cranberry Crumb Bars Recipe Is The Ideal Combination Of Sweet, Tart, Tender & Crumbly
A delicious use for canned cranberry sauce
Every Thanksgiving, I’m reminded how much I like cranberry sauce. My family prefers jellied cranberry sauce, but I like whole berry. In Kelly Senyei’s Cranberry Crumb Bars recipe, she transforms this humble ingredient into a delicious dessert. Creator of the popular food site Just A Taste, Kelly Senyei combines the almost-an-afterthought condiment with common pantry ingredients to make her sweet treats.
The oat-y crust mixture does double duty as an appealing crumb topping, too. You’ll need 2 cups of cranberry sauce for Kelly Senyei’s Cranberry Crumb Bars recipe; you can use either jellied or whole berry sauce. Ingredients
- 11/2 cups all-purpose flour
- 11/2 cups rolled oats
- 1 cup packed light brown sugar
- 1/2 tsp. ground cinnamon
- 1 tsp. baking powder
- 1/2 tsp. kosher salt
- 3/4 cup unsalted butter, melted and cooled slightly
- 1 tsp. vanilla extract
- 2 cups leftover cranberry sauce
Instructions
PrintHeat oven to 375°F. Line 8-inch square baking pan with parchment paper so that it hangs over two sides. In large bowl, whisk together flour, oats, sugar, cinnamon, baking powder and salt. Add butter and vanilla to flour mixture; stir until butter is incorporated and dough begins to clump together. Press two-thirds of mixture into bottom of prepared pan, spreading into an even layer. Bake base layer for 10 min.; remove from oven.
Spoon cranberry sauce on base then spread into even layer. (Cranberry sauce will sink slightly into base since it is warm.) Sprinkle pieces of remaining crumb mixture on top. Bake bars until top crumb mixture is golden and set, 25–30 min. Remove bars from oven; cool completely in pan before slicing.
