Leftover spaghetti gets a crispy, cheesy upgrade in this indulgent grilled cheese mashup!

Got leftover spaghetti? Courtney Cook has the ultimate glow-up for it! This teacher-turned-internet sensation spent the last year+ sharing her desk lunches and quirky food combos on TikTok and Instagram. Her motto, “Never apologize for how you eat your food,” perfectly captures the spirit of this wonderfully indulgent Spaghetti Grilled Cheese. Courtney Cook’s Spaghetti Grilled Cheese recipe takes last night’s pasta and transforms it into a crispy, melty, utterly satisfying sandwich that’s part comfort food, part genius hack. Gooey Provolone and Muenster hug a hearty scoop of saucy spaghetti between golden, buttery brioche slices. It’s the kind of delightfully messy, no-rules creation that turns leftovers into something cravable. Serve with chips and ranch for dipping, and dig in without apology!

SPAGHETTI & MEAT SAUCE:

In skillet, heat 1 Tbs. olive oil on medium-high heat and brown the ground beef, seasoning with salt and pepper, then drain. In a large pot, heat remaining olive oil on medium-high heat, add onion and bell peppers, season with salt and pepper, and sauté until softened and lightly golden, about 5 min. Add the jarred pasta sauces, beef and vegetables to the large pot, stir and let simmer on low for at least 30 min., partially covered, stirring occasionally. Toss with cooked spaghetti and top with Parmesan.

SPAGHETTI GRILLED CHEESE: Heat leftover spaghetti with meat sauce until warm. Place cheese on either side of bread with 1 cup spaghetti in the middle, then press together lightly. In small skillet, heat 2 Tbs. butter over medium-low heat. Add your assembled sandwich to skillet and cook on both sides until bread is lightly browned and cheese is melted. Repeat with all sandwiches. Cut in half diagonally and serve, if desired, with chips and ranch sauce.
