Come Home To Comfort With This Chicken Cacciatore Recipe That’s Sure To Become a New Family Favorite

Cacciatore is a rustic Italian stew which most likely originated during the Renaissance period in Tuscany. Tomatoes, peppers, onions, mushrooms and herbs were simmered with rabbit, lamb or game. Today chicken is used in this one-pot meal which is popular around the world. That’s what inspired our Chicken Cacciatore recipe. Only instead of simmering on the stove top, we put our slow cooker to work so you can simply set it and forget it until it’s time to eat.

We coat the chicken in flour to help thicken the sauce. Then for a pop of brightness stir in a splash of balsamic vinegar. For even more flavor we add cherry tomatoes towards the end so they burst and release there sweet-tangy juices. So yummy! Serve this dish with crusty bread to mop up the deliciously rich sauce. Ingredients

  • 1 lb. baby potatoes, halved
  • 8 oz. mushrooms
  • 2 cloves garlic, sliced
  • 4 each bone-in chicken thighs and drumsticks, about 31⁄2 lbs.
  • ⅓ cup all-purpose flour
  • 1 (8 oz.) can tomato sauce
  • 2 Tbs. balsamic vinegar
  • 1 tsp. dried Italian seasoning
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2 cups cherry tomatoes
  • ⅓ cup drained pitted Kalamata olives
  • Fresh oregano leaves and crusty bread (optional)

Coat 6-qt. slow cooker with cooking spray. Place potatoes, mushrooms and garlic in bottom of slow cooker. In large bowl, toss chicken pieces with flour to coat, shaking off and reserving excess flour. Place chicken over vegetables.

Stir together tomato sauce, vinegar, Italian seasoning, salt, pepper and reserved flour; spoon over chicken. Cover; cook on low, 41⁄2 hrs. Add tomatoes. Cook on low 1 hr.

Skim and discard fat from juices in slow cooker. Stir olives into chicken mixture. If desired, garnish with oregano and serve with crusty bread.
