Easy and Irresistible Chocolate Cream Stacks Recipe Is Perfect for any Celebration
There’s nothing more satisfying than a decadent dessert to finish off a great meal. And one of my favorites is chocolate layer cake. What could be better than that? How about having an entire cake just for yourself? That’s why we came up with these fun individual-sized Chocolate Cream Stacks recipe.
Mini cake stacks are super-easy to put together. We started with convenient cake mix, but to give it an unexpected flavor twist, we stirred in fruity jam — we like to use raspberry, which is a tasty complement to the chocolate, but you can swap in whichever flavor you prefer. Then we layered it with an easy 3-ingredient frosting comes together in minutes. For the finish, top with white chocolate shavings and fresh raspberries. Ingredients
- 1 (15.25 oz.) pkg. dark chocolate cake mix
- 3 eggs
- ½ cup oil
- ¼ cup seedless raspberry jam
- 6 oz. cream cheese, at room temp.
- ¾ cup confectioners’ sugar
- 1½ cups heavy cream
- White chocolate curls
- 60 raspberries
Instructions
PrintLine bottom of 2 (15¼”x10¼”) rimmed baking sheets with parchment; coat with cooking spray. On low speed, beat cake mix, eggs, oil, 1 cup water and jam 30 sec.; on medium, beat 2 min. Divide batter between baking sheets. Bake until toothpick inserted in centers comes out clean, about 12 min. Let cool.
Using 2¾” round cutter, cut out 24 shapes. On medium speed, beat cream cheese and sugar until smooth. On low, gradually beat in cream; on medium, beat until stiff, 2 min. Transfer to pastry bag fitted with ½” plain tip. Pipe half of filling on 12 cake rounds. Top with remaining cake rounds; pipe on remaining filling. Sprinkle with white chocolate and top with raspberries.
