Quick to prep and oh so easy to make, this crispy oven-fried chicken recipe makes a great weeknight dinner. Crispy and crunchy, yet juicy and tender, it’s everything fried chicken should be.
It’s also better for you! In this twist on classic fried chicken, we use skinless chicken pieces and coat them in a mixture of buttermilk seasoned with paprika and onion powder. It all bakes up in the oven in 30 to 40 minutes to get just the right amount of golden crunchiness and flavorful kick. No frying required!

- ½ cup buttermilk
- 1 tsp. paprika
- 1 tsp. onion powder
- 1 tsp. salt
- 4 lbs. chicken pieces, skin removed
- ⅔ cup all-purpose flour
Instructions
PrintIn bowl, combine buttermilk, paprika, onion powder and ½ tsp. salt. Add chicken pieces; turn to coat. Cover; chill 2 hrs., turning several times.
Heat oven to 425°F. Line rimmed baking sheet with foil. Place rack on top; coat with cooking spray. In bowl, mix flour with remaining ½ tsp. salt. Working with one at a time, remove chicken pieces from marinade, letting excess drip off; coat in flour mixture.
Transfer to rack; coat generously with cooking spray. Bake until golden and no longer pink near bones, 30-40 min. Broil until browned, 3 min.
