Ingredients

  • 1½ cups graham cracker crumbs
  • 4 Tbs. + 2⁄3 cup sugar
  • 6 Tbs. butter, melted
  • 2 (8 oz.) pkgs. cream cheese, at room temp.
  • 3 eggs
  • ½ cup sour cream
  • 2 Tbs. all-purpose flour
  • 1 tsp. vanilla extract
  • 2 cups strawberries, trimmed, sliced

Heat oven to 300°F. Line 12 muffin cups with cupcake liners. Coat with cooking spray. 

In bowl, mix crumbs, 2 Tbs. sugar and butter. Dividing evenly, press into cupcake liners. 

On medium-high speed, beat cream cheese and 2⁄3 cup sugar until fluffy. Beat in eggs, sour cream, flour and vanilla. Divide among liners. 

Bake until center is no longer wet, about 30 min. Let cool 15 min. Transfer from pan to rack; let cool. Chill. 

In food processor, puree berries and remaining 2 Tbs. sugar. Push through strainer; spoon onto cheesecakes.
