Our Berry-licious Ice-Cream Sandwiches Recipe Is a Taste of Summertime Bliss

If you need a frozen treat to beat the heat, whip up this recipe for Ice-Cream Sandwiches. It’s a homemade version of the freezer aisle favorite as it takes raspberry-vanilla ice cream and sandwiches it between chocolate cookies. Optional toppings include chocolate sauce and raspberries. Each bite of these DIY ice cream sandwiches offers a combination of sweet, decadent and tart flavors. Also, the chewy cookies nicely complement the soft ice cream. These sandwiches prep in about an hour — and will become your go-to treat this summer!

The ice cream filling is made with a store-bought vanilla flavor that’s softened and mixed with fresh raspberries. However, you can use another ice cream flavor such as chocolate, salted caramel or pistachio. Also, fruits like ripe strawberries or blueberries can be used in place of raspberries. Ingredients

  • 1/2 cup butter, at room temp.
  • 1/2 cup confectioners’ sugar
  • 1 egg
  • 1/2 tsp. vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/4 cup special dark unsweetened cocoa powder
  • 1/4 tsp. salt
  • 3 1/2 cups vanilla ice cream, softened
  • 1 (6 oz.) pkg. raspberries +additional (optional)
  • Chocolate sauce (optional)

On medium speed, beat butter and sugar; beat in egg and vanilla. On low, beat in flour, cocoa and salt until dough forms. Shape into disk. Wrap; chill. 

Heat oven to 350°F. Line baking sheet with parchment. Roll out dough to 1/4” thick. Using 2 1/2” round cutter, cut out shapes. Place 1” apart on baking sheet. Bake until almost firm, 8 min. Cool. 

Mix ice cream and berries; spread 9 cookies with mixture. Press on remaining cookies. Transfer to baking sheet; freeze. If desired, add sauce and raspberries.
