Cook Time

  • ½ cup buttermilk
  • 1 tsp. paprika
  • 1 tsp. onion powder
  • 1 tsp. salt
  • 4 lbs. chicken pieces, skin removed
  • ⅔ cup all-purpose flour

In bowl, combine buttermilk, paprika, onion powder and ½ tsp. salt. Add chicken pieces; turn to coat. Cover; chill 2 hrs., turning several times.

Heat oven to 425°F. Line rimmed baking sheet with foil. Place rack on top; coat with cooking spray. In bowl, mix flour with remaining ½ tsp. salt. Working with one at a time, remove chicken pieces from marinade, letting excess drip off; coat in flour mixture.

Transfer to rack; coat generously with cooking spray. Bake until golden and no longer pink near bones, 30-40 min. Broil until browned, 3 min.
