Hauntingly Good Chili
These “ghosts” are sure to keep your little ghouls smiling through a night full of Halloween fun.

Ingredients
- 2 Tbs. canola oil
- 1 cup grated zucchini
- ¼ cup grated carrot
- 1 medium onion, minced
- 1 clove garlic, minced
- 1 – 2 tsp. chili powder
- 2 cups diced or shredded cooked chicken
- 1 (16 oz.) can chili kidney beans, such as Bush’s
- 1 (8 oz.) can tomato sauce
- 2 Tbs. minced fresh cilantro
- Salt
- Pepper
- 2 cups prepared mashed potatoes
- 1 cup shredded mild Cheddar
- 8 capers
Instructions
- In skillet, heat oil over medium heat; add zucchini, carrot, onion, garlic and chili powder. Cook, stirring occasionally, until vegetables are tender, about 5 min. Stir in chicken, beans, tomato sauce and cilantro. Cover; simmer, stirring occasionally, 20 min. Season to taste with salt and pepper.
- Meanwhile, heat mashed potatoes until consistency is soft, adding water if needed to thin. Divide chili evenly among 4 ramekins or bowls. Divide cheese evenly over chili. Pipe or spoon mashed potatoes over cheese to form ghosts; insert 2 capers into each for eyes.
