  • 2 Tbs. canola oil
  • 1 cup grated zucchini
  • ¼ cup grated carrot
  • 1 medium onion, minced
  • 1 clove garlic, minced
  • 1 – 2 tsp. chili powder
  • 2 cups diced or shredded cooked chicken
  • 1 (16 oz.) can chili kidney beans, such as Bush’s
  • 1 (8 oz.) can tomato sauce
  • 2 Tbs. minced fresh cilantro
  • Salt
  • Pepper
  • 2 cups prepared mashed potatoes
  • 1 cup shredded mild Cheddar
  • 8 capers

  • In skillet, heat oil over medium heat; add zucchini, carrot, onion, garlic and chili powder. Cook, stirring occasionally, until vegetables are tender, about 5 min. Stir in chicken, beans, tomato sauce and cilantro. Cover; simmer, stirring occasionally, 20 min. Season to taste with salt and pepper.
  • Meanwhile, heat mashed potatoes until consistency is soft, adding water if needed to thin. Divide chili evenly among 4 ramekins or bowls. Divide cheese evenly over chili. Pipe or spoon mashed potatoes over cheese to form ghosts; insert 2 capers into each for eyes.
