This Loaded Bratwursts Recipe Will Take Your Cookout to the Next Level

Kraut infused with coriander perfectly complements these flame-kissed sausages.

We love a good hot dog from the grill, but sometimes, you want to elevate your cookout menu beyond classic American fare. And this loaded bratwursts recipe does just the trick to make the night memorable — and they’re ready in 30 minutes!

So what are bratwursts? Originating in Germany, these mildly spiced fresh link sausages typically contain ground pork. They also have a distinct seasoning blend of ginger, nutmeg, coriander and caraway. And get this: Bratwursts are 5 times richer in vitamin B-1 than hot dogs! They also contain less sodium.

For a hearty bite, we load ours up with pickled onion, spiced sauerkraut and sliced pickle for extra German-inspired flavors. Now all you need is a mug of beer and you have yourself an at-home Oktoberfest!

Ingredients

  • 6 fresh bratwursts, such as Johnsonville
  • 1 medium red onion, sliced
  • 1 Tbs. apple cider vinegar
  • 1/2 tsp. sugar
  • Pinch of salt (optional)
  • 1 (8 oz.) pkg. sauerkraut
  • 1/2 tsp. ground coriander
  • 6 potato hot dog rolls
  • 1 half-sour pickle, sliced

Prepare the grill for medium-high direct-heat cooking. Place sausages in pot; add enough water to cover by 2”. Over medium-high heat, bring to a boil; reduce heat to medium and cook until no longer pink in center, 5–7 min. Remove sausages.

In a microwave-safe bowl, microwave onion until softened, 1–2 min. Stir in vinegar, sugar and salt. Let stand 10 min.

In  a small pot, combine sauerkraut and coriander; over medium heat, cook until heated through, 2–3 min. Drain.

Coat the sausages with cooking spray. Grill, rotating occasionally, until grill marks appear, 8–10 min. Place rolls, cut side down, on grill; grill until lightly toasted, about 1 min. Fill rolls with bratwursts, pickled onion, spiced sauerkraut and sliced pickle.
