  • 8 oz. linguine pasta
  • 3 Tbs. butter
  • 1/3 cup fresh breadcrumbs, toasted
  • 1 lb. peeled, deveined jumbo (21–25) shrimp, tails on
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • Chopped fresh parsley + 1 chile pepper, thinly sliced (optional)

In large high-sided skillet of salted boiling water, cook pasta according to package directions for al dente. Reserve 1/2 cup pasta cooking liquid; drain pasta.

In small microwave-safe bowl, microwave 1 Tbs. butter until melted, about 15 sec.; add in breadcrumbs; stir until evenly coated and combined. Reserve.

In same skillet, melt 1 Tbs. butter over medium-high heat. Add shrimp; cook, flipping occasionally, until shrimp are pink and opaque, 5–6 min. Add minced garlic; cook 1 min. or until fragrant.

Stir in lemon juice, reserved pasta cooking liquid and remaining 1 Tbs. butter until butter just melts, about 1 min. Add pasta; cook, stirring, until heated through, 1 min. Transfer to serving plate. Sprinkle with reserved breadcrumb mixture. If desired, toss with chile pepper and sprinkle with parsley.
