Tex-Mex Meets Italian in This Spiced Beef with Corn, Peas and Penne Recipe — Just $1.73 a Serving

Pasta with meat sauce gets a fresh twist and delicious flavor from toasted chili powder

When I was growing up, my mom prepared a family favorite each night of the week. Monday night dinners were reserved for her spaghetti with meat sauce. I can still remember the wonderful aroma of the rich sauce simmering on the stove when I arrived home from school. But today, sometimes I like to switch things up a little. That’s what inspired this Spiced Beef with Corn, Peas and Penne recipe.

First, we brown onions and beef. Then for a Texas twist, we stir in chili powder and cook until the spice has a chance to “toast” before we mix in the tomatoes. This adds a layer of smoky goodness. Some colorful veggies bring the whole thing to life. We serve the sauce over penne, but any pasta shape you have on hand would be just as delicious — and it all adds up to just $1.73 per serving.
