Turkey Milanese

The secret to making day-old turkey shine? Using a rich mushroom sauce to moisten the meat and add an extra layer of flavor!

Ingredients

  • 1 lb. sliced mushrooms
  • 2 Tbs. butter
  • 1 cup turkey gravy
  • 1 tsp. fresh rosemary
  • ¾ cup all-purpose flour
  • 2 large eggs
  • 1½ cups panko bread crumbs
  • ½ cup grated Parmesan
  • 4 (½”-thick) slices cooked turkey breast
  • ¼ cup canola oil

Instructions

  1. In large skillet over medium-high heat, cook mushrooms in butter 10 min. or until browned and pan is dry, stirring often. Stir in gravy and rosemary; let simmer 2 min. 
  2. Place flour on wax paper; season with salt and pepper. Beat eggs with 1 Tbs. water in pie plate. Combine panko crumbs and Parmesan on separate piece of wax paper. Coat each turkey slice with seasoned flour; shake off excess. Dip into eggs, then dredge in panko mixture to coat. 
  3. Heat oil in a large skillet over medium-high heat; add turkey and cook 2 min. or until browned, turning once. Drain on paper towels. Serve with gravy and a salad.
