5-Ingredient Ice Cream Cake Recipe Features 2 Kinds of Oreos for Double the Yum

This recipe is the perfect make-ahead dessert option for your next BBQ or gathering

To end your upcoming BBQ or gathering on a sweet note, whip up this Ice Cream Cake recipe. This treat uses just 5 ingredients: two types of Oreo cookies, vanilla ice cream, semisweet chocolate chips and heavy cream. The combination of ingredients produces a frozen delight with a creamy filling, crunchy cookie base and luscious chocolate ganache topping. Extra halved cookies are garnished on top before the cake is ready to slice and serve.

For a flavor twist, you substitute white chocolate chips for the semi-sweet variety when making the ganache. This swap provides the cake with an added layer of sweetness. Additionally, using a serrated knife and dipping it in warm water allows you to get clean slices for serving. Your guests will definitely want seconds of this sweet and decadent ice cream cake!

  • 1 (10.1 oz.) pkg. Oreo Cakesters
  • 6 Oreos + additional
  • 1½ (48 oz.) conts. vanilla ice cream, slightly softened
  • ⅓ cup semisweet chocolate chips
  • ¼ cup heavy cream

Coat bottom of 8"x3" springform pan with cooking spray. In food processor, process Cakesters until finely ground. Press in bottom of pan. Freeze until firm, about 15 min.

Chop 6 Oreos. In large bowl, stir together ice cream and chopped cookies until combined. Spread in pan. Cover; freeze until firm, about 4 hrs.

In microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 15-sec. intervals, stirring, until smooth. Let cool. Spread over top of cake. Remove side of pan. Transfer cake to serving plate. Top with additional Oreos. Let stand 5 min. before serving.
