Lemon Yogurt Cheesecake Recipe Is a No-Bake Treat to Satisfy Your Sweet Tooth

Although cheesecake is one of my favorite desserts, it can be a little too rich at times. Luckily, this Lemon Yogurt Cheesecake recipe offers those same creamy flavors in a lightened-up version of the treat. Rather than using traditional cream cheese, this recipe calls for lemon and cream Greek yogurt. This swap gives the cheesecake a tart flavor and velvety texture with fewer calories. Even better, this dessert doesn’t require any baking and is extra sweet atop a fudgy wafer crust. Ultimately, you’ll end up with a wow-worthy cheesecake that guests will want another slice of!

If you’re looking to customize this recipe, use another Greek yogurt flavor like vanilla, raspberry or key lime. Also, you can make individual-sized portions of this dessert by assembling them in miniature cheesecake molds. Ingredients

  • 24 Famous chocolate wafers, finely ground
  • 2 Tbs. + 1/2 cup sugar
  • 4 Tbs. butter, melted
  • 3 (8 oz.) pkgs. cream cheese, at room temp.
  • 2 Tbs. lemon juice
  • 1 tsp. lemon zest
  • 3 (5.3 oz.) conts. lemon and cream Greek yogurt, such as Chobani
  • 1 (1/4 oz.) envelope unflavored gelatin

Grease 8”x3” springform pan. Mix crumbs, 2 Tbs. sugar and butter; press into pan. Freeze 20 min. In food processor, process cream cheese, remaining sugar, lemon juice and zest until smooth; pulse in yogurt until smooth.

In 1-qt. microwave-safe bowl, stir 2 Tbs. water into gelatin; let stand until absorbed, 5 min. Microwave until melted, 10 sec. Stir in 1 cup cream cheese mixture. Stir gelatin mixture back into remaining cheese mixture; spread over crust. Cover; chill 6 hrs. Remove side of pan. Transfer to serving plate. Garnish as desired.
