Delectable Meat and Vegetable Fritters Recipe For Your Next Party — Or Anytime!

On Saturday nights my friends and I often take turns hosting a get-together to relax over drinks. When it’s my turn, I like to serve appetizers too. So, I’m always looking for fun dishes that are delicious as well as easy to make. That’s why I love this Meat and Veggie Fritters recipe. These delectable bites turn out so elegant and impressive that no one can guess what a breeze they are to whip up.
We start with self-rising flour. This ensures the fritters cook up extra fluffy. Then stir in chopped deli meat, zucchini and scallions. But you can sub in just about anything. Try adding 1/2 cup chopped antipasto veggies in place of zucchini or any left-over cooked vegetables you have on hand. Not a fan of cold cuts? Simply add chopped cook bacon or prosciutto. Ingredients
- 1 cup self-rising flour
- Pinch of salt
- 5 oz. water
- 1 Tbs. canola oil + addotional for frying
- 1 egg, separated
- 2 cups chopped cooked cold cuts
- 1 zucchini, grated
- 2 green onions, sliced
- Salad and fruit chutney, to serve
Instructions
PrintSift flour and salt together into a large bowl. Make a well in center of flour.
In a jug, whisk water, 1 Tbs. oil, and egg yolk. Add to flour, mixing to a smooth batter. Set aside for 15 minutes.
Blend in meat, zucchini, and onions, and season to taste. In a clean bowl, beat egg whites until stiff. Fold lightly into batter.
Heat a little oil in a frying pan on high. Place heaped tablespoonfuls of mixture into pan in four batches. Fry two to three minutes each side. Drain on paper towel. Continue with remaining mixture. If desired, serve with salad and fruit chutney.
