Easy Meatball and Potato Gratin Recipe Combines 2 Classic Comfort Foods In One Supper Sensation

That’s why I love this Meatball and Potato Gratin recipe. It combines two classic comfort foods in one so it’s doubly delicious. Best of all, we have a few shortcuts that make it even easier.
To create the sauce, we start with a can of cream of bacon soup mixed with sour cream. It adds a hint of smoky tang. Then, ready-made seasoned meatballs and canned sliced potatoes are the other time-saving secrets to this hearty dish. Simply toss it all together with shredded Swiss cheese and pop it into the oven. Ingredients
- 1 (10.5 oz.) can condensed cream of bacon soup
- 1/2 cup sour cream
- 3 scallions, sliced
- 1 tsp. cracked pepper
- 1/2 tsp. grated lemon zest
- 3 (14.5 oz.) cans sliced potatoes, drained
- 12 fully cooked refrigerated caramelized onion chicken meatballs, from 12-oz. pkg.
- 1/2 cup shredded Swiss, about 2 oz.
- Chopped fresh parsley (optional)
Instructions
PrintHeat oven to 375°F. Coat 21/2-qt. baking dish with cooking spray. In bowl, mix soup, sour cream, scallions, pepper and zest. Add potatoes; stir until evenly coated.
Spread potato mixture in bottom of baking dish; tuck meatballs in between potatoes. Evenly sprinkle with cheese. Bake until golden and bubbly, 35–40 min. If desired, sprinkle with parsley.
