Tender and Juicy Meatball Heroes Recipe Makes A Satisfying Lunch

I’m a big fan of fat juicy sandwiches. And for me, a hero is the ultimate lunchtime bite. These overstuffed treats originated in New York. Also know as subs or grinders, they can be filled with all kinds of meat and cheese and served either hot or cold typically on a long, soft loaf. For our Meatball Heroes recipe, we use hoagie rolls and slather the meatballs with rich tomato sauce and lots of melty cheese. Just one bite of all that ooey-gooey goodness, and we promise you’ll be coming back for more.

From-scratch meatballs are a cinch to make. Plus, you can customize them. Try adding grated Parmesan, herbs, spices — even chopped sun-dried tomatoes. For ours, we start with meatloaf mix. This combination of ground beef, pork and veal ensures they turn out super-moist and tender. Then we mix in parsley and garlic for extra zing. So delicious! Ingredients

  • 1½ lbs. meatloaf mix
  • ½ cup Italian-style dry breadcrumbs
  • 2 eggs, lightly beaten
  • ¼ cup chopped parsley
  • 2 cloves garlic, minced
  • 6 hoagie rolls, split
  • 1½ cups tomato-basil pasta sauce, warmed
  • 6 slices mozzarella

• In bowl, mix meat, breadcrumbs, eggs, parsley and garlic until just combined; divide into 24 portions. Roll into balls.

• Coat large nonstick skillet with cooking spray. Heat over medium heat. In batches, cook meatballs, turning, until browned all over, about 5 min. per batch. Return all meatballs to skillet. Reduce heat to medium-low. Cover; cook until no longer pink in centers, 15-20 min.

Line rimmed baking sheet with aluminum foil. Spread roll bottoms with half of tomato-basil pasta sauce. Dividing evenly, top with meatballs; spread with remaining pasta sauce. Layer with mozzarella slices. Place on baking sheet. Broil on high until cheese is melted, about 4-5 min. Top with roll tops.
