Peach ‘n’ Berry Cookie Stacks
Pecan sandies are the perfect complement to fresh fruit and orange-scented cream in these Southern-inspired bites.

Ingredients
- 4 peaches or nectarines, pitted, sliced
- 2 Tbs. granulated sugar
- ½ cup heavy cream
- 1 Tbs. confectioners’ sugar
- 1 tsp. orange zest
- 1½ cups fresh raspberries
- 8 pecan sandies
Instructions
- Toss peaches with granulated sugar; let stand until syrup forms, about 5 min. On medium speed, beat cream and confectioners’ sugar until soft peaks form, 1-2 min. Stir in orange zest.
- Reserve ½ cup whipped cream and 8 raspberries. Divide peach slices and juice evenly over 4 cookies. Top with remaining whipped cream then raspberries and remaining cookies. Garnish with reserved whipped cream and raspberries.
