Sandra Lee’s Simple Sandies Recipe Is the Easiest Holiday Cookie Ever

Want to dress up these humble bites? I like to spread red or green sparkling sugar in a rectangle on a cutting board. Then, once the dough is shaped into a log, I roll the log in the sugar to coat. - 1 3⁄4 cups all-purpose flour
- 3⁄4 cup sugar
- Pinch of salt
- 3⁄4 cup cold butter, cut into small pieces
- 1 egg yolk
- 1 Tbs. whipping cream
- 1 tsp. vanilla extract
Instructions
PrintIn a food processor combine flour, sugar and salt. Add butter pieces. Pulse until mixture is crumbly. In a small bowl whisk together egg yolk, whipping cream and vanilla. Add to food processor. Pulse until dough comes together. Turn dough out onto a flat surface. Shape into a log 2 inches in diameter. Wrap in plastic wrap; chill for 1 hour.
Heat oven to 350°F. Cut dough into 1⁄2-inch-thick slices. Place on parchment-lined cookie sheets and bake 8–10 min. or until edges are lightly browned. Cool on cookie sheets for 5 min. then transfer directly to wire rack. Cool completely on rack.

Make ’em Almond Sandies! Replace 3⁄4 cup of the flour with almond flour and 1 tsp. vanilla extract with 1⁄2 tsp. almond extract. Before chilling dough, roll log in finely chopped almonds. Wrap and chill dough, then slice and bake as directed.
