Creamed Spinach

This rich dish is a snap to make with frozen spinach! For a bit of extra crunchiness, Food Network star Sunny Anderson tops hers with French-fried onions.

Ingredients

  • 1/4 c. unsalted butter
  • 1/2 red onion chopped
  • 2 cloves garlic minced
  • 1/4 tsp. red pepper flakes
  • 1/4 tsp. kosher salt
  • 1 3/4 c. heavy cream
  • 1 c. shredded Parmesan
  • 1 tsp. ground nutmeg
  • 1/2 c. sour cream
  • 10 oz. frozen, chopped spinach thawed, squeezed dry
  • 1/4 tsp. pepper
  • 1/2 c. French fried onions optional

Instructions

Heat oven to 375°F. Butter 8" square baking dish.

In skillet over medium heat, melt 1/4 cup butter. Add red onions, garlic, pepper flakes, and 1/8 tsp of salt; cook 3 min., stirring often.

Add cream, Parmesan, and nutmeg; cook until cream starts to bubble, stirring often.

Remove from heat; stir in sour cream, spinach, pepper, and remaining salt.

Pour into bakin gdish, sprinkle with fried onions, if desired. 

Bake for 15-20 min. or until golden.
