Ingredients

  • 1 1/3 c. self-raising flour
  • 1 tsp. ground ginger
  • 1 tsp. mixed spice
  • 4 oz. unsalted butter diced
  • 3 oz. dark brown soft sugar
  • 1 oz. granulated sugar for dusting
  • 2 fl oz. milk
  • Icing to decorate

Instructions

Sift together the flour and spices, then add the diced butter and crumb together with your fingertips.

Add the milk to form a paste. Wrap in film and allow to rest for minimum 2 hours (best left overnight).

Pre-heat the oven to 350 degrees Fahrenheit.

Roll out to approximately half-inch thickness (but depends on the size of the cookie you wish to make), cut shapes out and place on to nonstick paper or silicon mat, sprinkle with a little granulated sugar before baking until set.

Bake for 10 to 12 minutes. Allow to cool fully on a cooling rack before icing with your choice of design.
