Dr. Westman loves this easy-make breakfast treat and bread substitute

  • ½ cup mozzarella
  • 2 large eggs, beaten
  • Ket o-friendly fillings or toppings such as meat, veggies, mayo

Heat a waffle iron to medium-high. Spread half the cheese on iron, pour on eggs; top with remaining cheese. Close iron; cook until steam stops, 3 – 5 minutes. Serves 1. Enjoy in place of waffles or bread. Keeps in fridge 3 – 5 days; also freezes well.
