Spreading the Hygge Lifestyle Globally: Rå Hygge’s Organic Growth Brings Specialty Low-Acid Mushroom Coffee to the US
Coffee is a morning essential that awakens the senses while filling the home with its rich, comforting aroma. Yet, for many, the joy of starting the day with a hot cup comes with challenges like post-caffeine jitters, stomach discomfort, or heightened anxiety. For Irina Sandberg, a Nordic coffee and health entrepreneur, these concerns inspired the creation of the Rå Hygge brand. This specialty coffee redefines daily indulgence by blending Peruvian Arabica coffee beans with functional mushroom extracts with a standardized content of nutritional benefits. It uses a patented process that lowers acidity, delivering both a gourmet taste and a gentler experience.
With a carefully curated selection of mushrooms, from Reishi and Lion’s Mane to Tremella, every Rå Hygge blend delivers calmness and positivity into the body and mind without compromising flavor. Vegan and non-GMO, this Nordic company has been tapping into the abundance of Mother Nature since 2013, recently entering the US market to provide overseas coffee aficionados with a naturally balanced boost—enlocked in a warm cup of decadence.
Craft-roasted in-house in the South of Sweden, Rå Hygge’s coffee offers a balanced profile with a pH of above 6, compared to the more acidic pH of 3-5 found in traditional beans. Additionally, dried mushroom extracts from species like Chaga, Reishi, Lion’s Mane, Tremella, and Shiitake elevate one’s daily caffeine experience by infusing it with bioactive compounds and potential health benefits, such as enhanced memory, reduced stress, and a strengthened immune system.
Looking at Irina’s journey, it may seem somewhat ironic for this planet-conscious entrepreneur to own a coffee roastery. After moving to Denmark, she opened her first business, a two-story coffee shop in the center of Copenhagen. Despite her love for coffee’s complex taste and aroma, she faced challenges with caffeine’s effects and its acidity back in 2000. “I experienced jitters and discomfort from the acidity,” she recalls. “As much as I enjoyed the flavor, I couldn’t ignore the impact on my overall well-being.”

Everything shifted in 2008 when Irina launched a health food distribution company in the Nordic region. Over 12 years, she specialized in natural and organic products and the most vitalizing foods from Mother Nature. During this time, she uncovered the potential of functional mushrooms and recognized that incorporating their extracts into coffee could help balance caffeine’s effects while providing additional health benefits.
Drawing on her personal experiences and collaborating with experts, Irina developed the specialty whole bean mushroom coffee recipe in 2013, launching it in Finland—the country with the highest coffee consumption per capita. Her mission was to inspire coffee lovers to enjoy fewer cups each day, with higher quality, while experiencing great-tasting coffee and longer-lasting energy boosts—without the unwanted side effects.
In 2022, Rå Hygge took a significant step forward by establishing a micro-roastery in Southern Sweden, becoming a purely mushroom coffee-producing roaster. This move allowed it to roast ethically sourced organic Peruvian beans in-house and produce the final product under one roof. This hands-on approach not only enhanced the quality control but also marked an important milestone in its mission to craft unique, functional coffee.
After two years of refining the recipe and entrenching its impact across 18 countries, Rå Hygge entered the US market in January 2025 with a mission to elevate the coffee-drinking experience in a nation that consumes approximately 517 million cups a day. The company briefly ventured into the US before the COVID-19 pandemic halted overseas operations. Five years later, it has returned with an enhanced product sold through Amazon and a local distributor.
Drinking mushroom coffee is an effortless way to incorporate the health benefits of mushrooms into one’s daily routine without the need for supplements. For instance, Lion’s Mane is celebrated for supporting brain health and improving focus, while Reishi is renowned for its beneficial effects on the hormonal system. Tremella enhances skin hydration with its 18+ amino acids and antioxidants, and Shiitake is prized for its potential to lower cholesterol levels.
While terms like ‘superfoods’ may be a modern invention, mushroom extracts have been used for centuries in traditional Chinese medicine. Inspired by these ancient practices, Rå Hygge utilizes time-tested extraction methods, working with pure mushroom fruiting bodies and standardized nutritional values to ensure each cup delivers consistent health benefits. The mushrooms also contribute an earthy, umami flavor that enhances the unique taste profile of the medium-roasted specialty coffee beans.

Looking ahead, the company plans to introduce its low-acid mushroom coffee in a compostable coffee capsule format, along with a functional tea bag line, further reinforcing its position as a pioneer in nature-driven innovation. Embracing the hygge lifestyle—defined by the art of creating sanctuary and community, fostering closeness, and paying attention to what makes one feel open-hearted and alive—it aims to cultivate well-being, connection, warmth, and a sense of belonging, celebrating the everyday moments people share.
Rå Hygge’s mission is clear: to offer high-quality ‘hygge’ foods that prioritize taste, health, and sustainability for both people and the planet. “It’s all about elevating daily habits and upgrading routines with some of the most vitalizing wonders of Mother Nature,” shares Irina. “The expansion into the US is a milestone we’re incredibly proud of, and we’re excited for what’s to come next. Now, Americans can enjoy the taste we all love while nurturing their health and the planet—one jitter-free cup of joe at a time.”
