  • Shred your own cheese. Everything tastes better fresh, including cheese. It may include some extra elbow grease, but freshly shredded Parmesan will taste and look better. Avoid using pre-grated versions from a tub because it won’t give you the crispy texture you want.
  • Slice your onions evenly. A mandoline ensures even, thin slicing. But if you don’t own one or prefer not to use one (we get it), you can slice them by hand. Just be sure to pay close attention to the thickness. Cut the onion in half first for easier control. Drivas notes it’s important to keep the slices relatively intact so they hold their shape.
  • Fill your sheet pan. Make sure that your onion slices cover every inch of the pan. Yo don’t want to see any Parmesan peeking through! “Fill up the whole layer with onion,” she says, “On a lot of videos, there’s all this dead cheese space that could have been onion. That’s real estate!”

How to make two-ingredient onion ring chips

  • 7 oz. (2 cups, plus more if needed) freshly shredded Parmesan cheese
  • 2 small white onions, sliced into ¼ inch rings
  • ½ Tbs. olive oil
  • Salt, garlic powder and paprika (for extra flavor and color)

Directions:

  • Total time: 23 minutes
  • Yield: 4 servings
  1. Preheat your oven to 400° F, then line a 12×17 inch baking sheet with parchment paper.
  2. Prepare the cheese layer by spreading shredded Parmesan evenly on the baking sheet.
  3. Slice your onions into thin, even rings using a mandoline or knife. Then, arrange them on top of the Parmesan. Keep them touching but not overlapping to ensure full coverage and crispiness.
  4. Brush with olive oil and sprinkle with salt, garlic powder and paprika if desired.
  5. Bake for 18 minutes or until the chips turn golden and crispy. If they come out a little soft, bake for a few extra minutes. Let them cool completely before enjoying so they firm up.
